Our Favorite Muffins

3 cups whole wheat flour
2/3 cup honey
2 eggs
1/4 cup vegetable oil
1/2 cup applesauce (or other pureed fruit)
1/2 teaspoon cloves
1/2 cup raisins
1/12 cup rolled oats
2 tablespoons baking powder
1/12 cup water
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup chocolate chips


Mix flour, oats, baking powder and salt. Add egg, water, oil, honey and applesauce. Mix with beaters or by hand. spray muffin tin with cooking spray, or line with paper baking cups and fill 2/3 full. Bake at 375 degrees for 15 to 20 minutes or until lightly browned. Remove from pans and serve warm. Makes about 20 muffins.

Note: We have also used aprictor puree in place of the applesauce. It works very well and the muffins are delicious. We have a beautiful apricot tree outside our back door and everyyear I puree them and can them in quart jars which I use in alot of my baking.
